In a medium bowl, mix together the butter, sugar, vanilla, flour, and salt until smooth and combined. Next, add the oats and toasted coconut flakes, and mix gently until combined.
Using a tablespoon, drop the dough balls onto a lined baking sheet, leaving about 2 inches between each ball. Press down gently to flatten the balls slightly.
Bake cookies in a preheated oven at 175°C (350°F) for 10 to 12 minutes, or until edges are golden.
