Vegan Spinach and Cheese Gozleme

Ingredients:
For the dough:
- 3 cups (375g) Flour
- 1 teaspoon Salt
- 3/4 cup (180ml) Plant-based Milk
- 1/3 cup (80m) Water
For the filling:
- Olive oil
- 1 Onion, chopped
- 400g Fresh Spinach
- 300g Vegan Feta Cheese (or any vegan cheese of choice)
- Salt to taste
- Pepper to taste
Directions:
- Prepare the dough: In a large bowl, combine the flour and salt. Add the plant-based milk and water, then mix until a dough is formed. Knead the dough for 4-5 minutes until it becomes smooth and soft. Place the dough in a bowl, cover it, and allow it to rest while preparing the filling.
- Make the filling: In a pan, heat 2 tablespoons of olive oil. Add the chopped onion and sauté for 5-6 minutes until softened. Add the chopped spinach and cook until wilted.
- Prepare the filling mixture: Transfer the cooked onion and spinach into a large bowl. Crumble the vegan feta cheese into the bowl and season with salt and pepper to taste. Mix well until all ingredients are combined.
- Assemble the Gozleme: Divide the dough into 6 equal parts and shape each part into a ball. Roll out each ball into a thin rectangle. Place 2-3 tablespoons of the filling mixture in the center of the dough, leaving about 4cm of space around the edges. Fold the edges over the filling to enclose it.
- Cook the Gozleme: Heat a large skillet or pan over medium-high heat. Place the Gozleme on the skillet and cook until golden brown on both sides, pressing gently with a spatula to ensure even cooking. Optionally, brush each side with a bit of olive oil or melted vegan butter for added flavor. Repeat with the remaining dough and filling.
