Cheesy Hamburger Potato Casserole

Ingredients

  • 1 pound ground beef
  • 1 yellow onion diced
  • 3 to 4 pounds potatoes peeled and sliced (1/4-inch thick slices)
  • 8 ounces shredded Cheddar cheese or more if desired
  • 1 can Cheddar cheese soup mix
  • 12 ounces evaporated milk or whole milk
  • 1/2 cup regular milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Baking Dish: Spray a 9×13-inch baking dish with non-stick cooking spray.
  • Cook the Beef and Onion: In a large skillet, cook ground beef and diced onion until beef is fully browned.
  • Slice the Potatoes: Peel and slice the potatoes into 1/4-inch thick slices.
  • Layer the Ingredients: Layer one-third of the potato slices on the bottom of the baking dish, season with salt and pepper, then spread one-third of the cooked beef and onion mixture over the potatoes, followed by one-third of the shredded cheese. Repeat these layers two more times, ending with cheese on top.
  • Mix the Soup and Milk: In a bowl, mix Cheddar cheese soup, evaporated milk, and regular milk until smooth.
  • Pour the Mixture: Pour the soup mixture evenly over the layered casserole.
  • Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.
  • Finish Baking: Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
  • Cool and Serve: Let the casserole cool slightly before serving.

Notes

For a lighter version, substitute ground beef with ground turkey or chicken. You can also make it vegetarian by replacing the meat with vegetables and plant-based proteins.
