Coconut Lime Fish Curry with Jasmine Rice

1. Cook the jasmine rice

Prepare the jasmine rice according to the package instructions.
Set aside and keep warm.

2. Sauté the aromatics

Heat olive oil in a large skillet or saucepan over medium heat.

Add the chopped onion and cook for 3–4 minutes until soft and fragrant.

3. Add vegetables

Stir in the garlic, red bell pepper, and carrot.
Cook for about 5 minutes, allowing the vegetables to soften slightly.

4. Add curry paste and ginger

Add the red curry paste and grated ginger.
Cook for 1 minute, stirring constantly to release the aromatic flavors.

5. Create the coconut curry sauce

Pour in the coconut milk and fish stock (or water).
Stir well and bring the mixture to a gentle simmer.

6. Cook the fish

Carefully add the fish pieces to the simmering curry.

Let cook for 5–7 minutes, or until the fish becomes tender and fully cooked.

7. Finish the dish

Stir in the lime juice and chopped cilantro.

Season with salt and black pepper to taste.
