Preheat the oven to 375°F (190°C).

Using a sharp knife, carefully slice a pocket into each chicken breast, making sure not to cut all the way through.

Season the chicken evenly with salt, pepper, garlic powder, and dried thyme.

Heat the olive oil in a skillet over medium heat.
Add the chopped spinach and cook for 1–2 minutes until wilted. Remove from heat and stir in the dried cranberries. -
Stuff the chicken breasts with slices of brie cheese and the spinach-cranberry mixture.
If desired, drizzle a small amount of honey inside for a subtle sweetness. Secure with toothpicks. -
In the same skillet, cook the chicken over medium-high heat for about 2 minutes on each side until the outside becomes golden brown.

Transfer the skillet to the oven and bake for 15–18 minutes, or until the chicken is fully cooked.

Remove from the oven and let the chicken rest for 5 minutes before slicing. Serve warm and enjoy.
