- 1/2 cup + 2 tablespoons granulated sugar (112 grams)
- 1 3/4 cups all-purpose flour (227 grams)
- 1 1/2 teaspoons baking powder
- 1 cup chopped strawberries (140 grams)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the egg, lemon juice, vegetable oil, and vanilla until well combined.
- Add the granulated sugar to the mixture and whisk until the sugar is dissolved and the mixture is smooth.
- In the same bowl, add the all-purpose flour and baking powder. Use a spatula to mix until just combined.
- Gently fold in the chopped strawberries until evenly distributed throughout the dough.
- Using a cookie scoop or spoon, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the cookies are set.
- Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
