Hearty Vegetable Beef Soup Recipe

  • ½ cup green beans

Instructions

Step 1: Brown the Beef

Heat olive oil in a large pot over medium heat. Add the beef cubes and cook for about 5–7 minutes, turning occasionally until browned on all sides. Browning the meat adds deeper flavor to the soup.

Step 2: Sauté the Aromatics

Add the diced onion and minced garlic to the pot. Cook for 2–3 minutes, stirring occasionally until the onion softens and becomes fragrant.

Step 3: Add the Vegetables

Stir in the carrots, celery, and potatoes. Mix everything together so the vegetables absorb the flavorful juices from the pot.

Step 4: Simmer the Soup

Pour in the beef broth and add the thyme, paprika, bay leaf, salt, and pepper. Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 35–45 minutes, until the vegetables are tender and the beef becomes soft.

Step 5: Finish and Garnish

Remove the bay leaf from the pot. Stir in the chopped parsley and adjust the seasoning if needed.
