Instructions:
- Preheat oven to 375°F (190°C).
- Prepare potatoes: Wash, peel, and dice potatoes into bite-sized pieces.
- Cook bacon: Cook bacon until crispy, then crumble.
- Prep vegetables: Mince garlic and finely chop onion.
- Combine ingredients: In a large bowl, mix potatoes, garlic, onion, crumbled bacon, and mayonnaise.
- Transfer to baking dish: Spread potato mixture evenly in a greased baking dish.
- Bake: Cover with foil and bake for 45 minutes, or until potatoes are tender.
- Add cheese: Remove foil, sprinkle with cheddar cheese.
- Melt cheese: Bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
