Old-Fashioned Tapioca Pudding – A Simple Classic Dessert Making a Comeback

Step 1: Soak the Tapioca

In a medium saucepan, combine tapioca and milk. Let it sit for 20–30 minutes to soften the pearls.

Step 2: Cook the Mixture

Place the saucepan over medium-low heat and add the sugar.
Cook while stirring frequently for about 10–15 minutes, until the mixture begins to steam and the tapioca becomes slightly translucent.

Step 3: Temper the Egg

In a separate bowl, beat the egg.
Slowly add a few spoonfuls of the hot mixture into the egg while whisking continuously. This prevents the egg from scrambling.

Step 4: Finish Cooking

Pour the egg mixture back into the saucepan.
Continue cooking for 3–5 minutes, stirring constantly, until the pudding thickens.

Step 5: Rest and Serve

Remove from heat and let it sit for about 10 minutes.

You can serve it:

  • Warm for a soft, creamy texture

  • Or chilled for a thicker consistency
