Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Step 2: Cook the Beef
In a large skillet over medium heat, cook the ground beef with the diced onion until the beef is browned and the onion is soft.
Add the garlic and cook for about 30 seconds, then drain excess grease.
Step 3: Add Seasoning and Mix
Stir in the salt, pepper, chili powder, and paprika.
Add the corn, beans, diced tomatoes, sour cream, and half of the shredded cheese. Mix everything until well combined.
Step 4: Assemble the Casserole
Transfer the beef mixture into the prepared baking dish and spread it evenly.
Sprinkle the remaining cheese on top.
Step 5: Add Cornbread and Bake
Prepare the cornbread batter according to the package instructions.
Pour it evenly over the beef mixture.
Bake for 30–35 minutes, or until the cornbread is golden and fully cooked.
